Best? Depends what you mean.
Jumpmaster is easily the most customisable and aggressively costed.
K-wings are the funnest to fly, followed closely by the TIE Phantom.
I don't know if I can decide which is the coolest looking ship between the X-wing, B-wing, A-wing, Intercepter, TIE/ln or TAP.

What do you mean by best? If I was alone wondering the Galaxy (meaning only one ship, points not relevant), it would defiantly be the Outrider with Lonewolf, HLC, Rey, Smuggling Compartments, Black Market Slicer and Anti-Pursuit Laser. If you are considering points, the Contracted Scout hands down.

If you mean best ship (regardless of pilot) then I would say for its points the Tie Defender delivers the "best".
If you mean "best" pilot (regardless of the ship he is on), that's easily Darth Vader. (If only his ship would deliver as strongly, almost though).
If you mean best center piece (a ship/pilot to build a squad around) that's between 3 and I can't pick (even with my Imperial bias) Biggs, Howlrunner, or Manaroo. (Palpatine doesn't count as he is a crew upgrade)

Ghost, plenty of room for Cargo, decend crew quarters to live in, small shuttle for excursions. Ability to spoof ship ident for when you don't want people knowing where you have been.
I would have to say that over the years, the pilot that has consistently placed himself at the top tables has to be Soontir. I don't know if he's the BEST, but he's always seeming to hang around with the best, even with those other "best" pilot go away he's still there. I really can't say any other pilot has been as good as Soontir is for how long he has been.

He's certainly supremely efficient and previously I would have bet on him one-on-one against almost any single ship build in the game, however I wonder if the next tournament cycle will see him fade away a bit due to the threat of BMST. I'm not suggesting he'll disappear entirely, just that he'll be less consistent.

Kind of would if they didn't (like 90% of rebel ships) have a reaally bad matchup with fat-HP ordnance carriers (someone said Jumpmaster?).
As for "best ship" (and not "best pilot"), I would say you have to reduce things, and search for one "best ship" for a specific role.
Best ordnance carrier is Jumpmaster, best swarm ship is TIE/ln, best blocker may be the A-wing, etc...

I feel the counter to Soontir is not so much BMST but Sabine Wren. Drop a Conner for 2 damage, Drop something else for 1 damage, bye Soontir, and I get to move first.
Tie defender ofc.
TIE-fighter. It has a massive host of different pilots, and all of them are viable in one way or the other. (Academy for mass/blockers, obisidian for PS, blacks for EPT etc. etc.)
+ TIE-swarm players always have my respect
