If Rey pilot was to have her agility reduced down to zero for what ever reason. Does Finn still get to add a blank result to your roll of nothing?

Contrast with C-3PO's "1 or more Evade dice".

Just because you have an agility value of 0, doesn't mean you can't defend. If you are under a primary attack from Range 3, you would still add the bonus green die and if there was an obstacle in the way, you'd get another one for that.

So with an agility value of 0, you'd roll zero dice giving you zero results, and Finn can then add his blank result, giving you a single blank result.

if an agility of 0 meant you didnt even perform your defense step, then an Evade Token on a 0 agi ship would be pointless.

As stated before, C3P0 doesnt work because he needs you to roll 1 die or more specifically.
