Question is...would anyone *take* Wedge, Biggs, or Hobbie in a TIE Interceptor?
Wedge would be a great Interceptor Pilot. Native PS9 is key. He's a lot like Soontir, but with better offense and one less defensive focus. He probably wouldn't be as good as Soontir, who can move once and then still get both defensive tokens, but he'd absolutely be good enough to see play, when you need something with a bit more bite.
So Sabine is defecting the Empire now?

They re-use models a lot, as the creation of a 3d model is one of the more expensive things in the show (resulting in characters re-used where they otherwise might not be - although sometimes for comical effect, RE: Brom Titus - and the majority of the characters being the 'generic' guys whose eyes are hidden by hats or helmets)
This is probably a new character that they just used one of the earlier 3d models for Sabine for, and simply replaced the textures on it.
Wasn't Wes the other known ex imp pilot/? Tycho was met with deep suspicion for a long time

An imperial wedge in an interceptor? If it's Ps 9, that could be brutal. I hope they don't release a rebel version of these guys in interceptors though. Did they defect with their ties in the show?

I wouldn't really expect him to keep the same PS - if added, he'd still be an Academy cadet at this point. I'm thinking the Wedge we got in the game, already, is meant to represent the RotJ version of the character.
(And yeah, if added , he's DEFINITELY an Imperial pilot, here. I don't see anything in the episode teasers to indicate they are defecting with their fighters.)
Biggs in an interceptor could be ... annoying... or it could be the worst thing ever lol
Less durable ship but with more greens. He could easily just get lucky and last forever, or flop in 1 shot.
