I am playing with Diala, Fenn, Gideon and Verena. Which do you think that are the best weapons-accesories for them?
Best weapons?
For Diala its either the Lightsaber she gets as a reward from her personal mission, or the Ancient Lightsaber Tier 3 item, if you have Obi-Wan's expansion. Both take a single upgrade, I would suggest either the Tier 1 Balanced Hilt or Extended Haft, depending what you want more - an extra surge, or Reach. If you're using the Ancient Lightsaber and you think you'll get enough surges - the Weighted Head from Bespin Gambit would be nice to add Cleave, especially for her Dancing Weapon. (Note that you can exhaust Weighted Head to give Cleave 1 without spending surges, so thats really nice)
Don't know the other characters well enough yet to comment - but my group just gave Verena the DDC Defender to increase the amount of attacks she does, and increase the strain she could get back per round to fuel her ability. Will see in the next mission how well that works...

You are describing a full support Diala but that is not the only way to play her. You can play her as dps or hybrid support/dps. In my experiences, most play her as a hybrid, skipping force throw, and focusing on doing damage, yet still using significant amount of strain supporting the party via force adept and it works just fine.
In this case, with Gideon in party, playing her as full support seems suboptimal.

With dancing weapon, you want to make sure she has cleave.

Tho the tricky thing with the T3 melee weapons is that they all want a different mod from an earlier tier.

Force Throw is easily one of the best abilities in the game. It is so versatile. You can use it to finish off someone on 1hp, you can throw someone next to Verena (for extra fun if they have 1hp), you can set up for Fenn's blast etc. I would never not take Force Throw.

Yeah, never ever skip force throw. 3 spaces is almost an entire move action for 1 strain. With Fenn and Diala you can get a 5 move hero 12 spaces with an action to spare to interact, or get Fenn 7 spaces of movement for no action so he can double blast a group. It's also a good way to get your heroes spread out on the first action so only 2 can get hit by Mortar (or Dew Back Rider flamethrower) or to stop Heavy Stormtrooper blasts from working.
