No.
You're never directly attacking another ship. The damage they take is like the splash damage that an Assault Missile or even the card that a Proton Bomb would result in.

The Stealth Device requires that you are targeted and hit by an attack, and the Seismic Torpoedoes are not targeting or attacking the ship directly, so you cannot strip away a Stealth device with a Seismic Torpedo.
The same goes for assault missiles, too.
Indeed. Anything other than being hit by an attack - an uncancelled [boom] or [kaboom] after green dice are rolled with a primary or secondary weapon - does not cost you stealth device, such as
- Damage from asteroids/debris
- Splash damage from assault missiles/ruthlessness
- Bombs/Mines/Seismic Torpedoes
- Feedback arrays
- Wampa (because you cancel all results, so don't actually 'hit')
