Probably a stupid question, but can you have more than one G7-X Grav Well Projector in a fleet - one per Interdictor, so you could blanket your opponent's deployment zone?

Yes.

The Grav Shift Reroute and the G8-Experimental Projector are both designated as "Unique" by the black dot next to their names.

The G7-X does not have one, ergo it can be taken multiple times, but with a Caveat:

A Ship cannot take the same Upgrade twice.

So for each projector, you will need an Interdictor.

2 G7s? 2 Interdictors.

3 G7s? 3 Interdictors... And there's 3/4s of your Fleet before you've taken even an Admiral...

I can't find the rules that says you can't take the same upgrade twice. You can't take modification twice but aside from that, builders I've seen do allow you to put 2 G7 on a single interdictor.

because it was irrelevant and impossible in the core set to do so. It was only with Wave 2 and the Large Ships that you even physically could.
