Am I allowed to confuse my opponent by unfolding the wings during Pivot landing mode and folding the wings during Pivot attack mode?

Depends on what is written on the rules insert that comes with the ship.
I think I'll just have each wing in opposite position of each other. Better if I can fly two of them side by side in mirror mode of this.
I doubt there'll be a stipulation to have your wings physically open or closed on a ship. It's not too often I see a Lambda with it's wings anything but folded up, and I've never heard a complaint (granted there aren't rules based on it's wings, but still). Especially considering having them open/closed may be more optimal in close proximity to other large ship (I'm looking at you Oicunn).
I hope there isnt a rule associated with the model's physical wings.
I plan on using the side of the card where the wings are open (for +1agility) but flying the model with wings closed most of the time since I dont like the look of the wings being open that much.
If there's a ruling on it the u wing better have greatly improved wing mechanics over the shuttle.

I hope no one notices the radar dish on my falcon isn't facing forwards. It might confuse people too much.
I doubt FFG will require any models with moveable parts to be in any particular orientation at any time in gameplay. People have been flying Lambdas with wings folded in landing position since wave 3 and it still pisses me off, but it's legal. The dual card for the U-wing is what matters, not what the model looks like. Keep your eye on the ball.
