The GR75 and the Raider are the first ones that come to mind as they're the only ships you're not allowed to have two on the field of in any 'standard' format, though there's a chance I'll pick up another GR75 just because it's such an amazing monster.
I personally probably wont get multiples of most of the Scum large base ships, since I just dont have much interest in the faction, and they are currently the only faction I've yet to get one of all the things for. (I still actually dont have an aggressor or YV-666.)
The only ships I have intentionally bought multiples of so far are the A-Wing and B-wing (Rebel Aces and 1 of each individual ship) because I wanted the different paint schemes and cards / pilots.
I unintentionally have two TIE/fo because they came free with the rules / dice / templates, and 2 Z95s because they came free with the ridiculously overpriced Scum Conversion Kit for my Firespray and HWK.
I'm not sure getting Heroes of the Resistance counts as buying multiples of the T-70 since it has a fancy Black One paint job (the only other T-70 I have is from the TFA core set).
When I finally do get around to playing Imperials, I have a couple of duplicates planned. I definitely want the Bomber, Defender and Interceptor individual ships for the cards and pilots (and the Imperial Navy blue/grey paint job on the Bomber and Defender) to fly with Imperial Veterans and Imperial Aces. I guess at some point I might do a TIE swarm, for which I would have to buy 4 or so TIEs, but that's not even remotely in the cards for a while yet with all the awesome Wave 9 and 10 ships (so excited for the Shadow Caster, Fang, and Sabine's TIE).
Only have one of E-wing, HWK [will prob get another to repaint] & Punisher [not likely to get another]...don't have a Raider [yet].
...will maybe get just one ARC [as already have a DeAgostini one, will see how they look together] unless I decide wanting enough extra cards justifies cost, and probably only one Upsilon.
...but otherwise already have 2 or more of everything, and will get multiples of other new releases [yeah, even the QuadJ, and I already have a MicroMachines of that]
Oh, probably only one HotR pack, as already have 3 YT's and a couple of T70s.
If a cheap E-Wing comes up, or it gets fixed, that'll drop off the list.

Other than that I have at least 2 of everything Imperial, and I will have 2 Gozanti soon enough. It seems as an Imperial player the rule is 2, 4, or 12... Lol. (Rule is broken by the three mentioned ofc.)

With every included upgrade card beside Veteran Instincts being unique, Sabine's TIE is wonderfully designed to be a one off purchase for a unique, anomalous ship.

All of wave 10. The Misthunter. The Shadowcaster. The YV-666. The Decimator. The TIE Punisher. The Ghost. The Lambda. Most large based ships. I don't need a second Firespray, but I think I will eventually break down and purchase one for both the Scum and Empire.
I am really considering buying a second YT-2400 to run a Vrill/Dash list. But I am a YT-2400 fan boy, even before I got into X-Wing. (I modded the computer game X-Wing Alliance to make the main ship a 2400.)
The only reason I am getting another YT-1300 is everything else that comes with Heroes of the Resistance.

Although technically you don't need any ships, if it wasn't for the Scyk and the Kihraxz I wouldn't have won two of the last four tournaments I've played in (one of the others was Yavin). Singling out ships like that smacks inexperience with the game and/or ignorance.

CR90 & Raider (as indulgence pieces - 1 of each is enough)
All Large-base ships with the exception of the Aggressor (though tempted to get a 2nd YV-666 and Firespray to convert/paint to Moralo and Kath respectively)
G-1A, Sabine's TIE & Quadjumper (cos it just feels like they should be unique... though that Quadie is cute, and if the card-art provides compelling paint variants, who knows)
TIE sf (cos I didn't really like Ep7)
Everything else joins the hanger in pairs or greater, even the single-card Huge ships.

Considering all expansions up to W10, all of them will be singles for me, except...
-6 TIE/ln; 3 TIE/fo; 2 TIE Bomber; 2 TIE Defender; 3 TIE/Interceptor;
-2 Scum Z95; 2 IG-2000
-2 Rebel Z95; 2 Y wing (1 scum, 1 rebel); 3 T-65 X Wing; 2 T-70 X Wing; 4 A Wing; 3 B Wing; 2 YT-1300
So, basically: One of each core and expansion, plus a couple extra TIEs, Awing, Bwing, and Z95 for swarming and IG-2000 (for brobotting).

Always multiple of the filler ships, Tie Fighters, Tie FOs, Z-95s, and A wings. I would also suggest multiple of y wings, tie bombers, tie interceptors (epic), TAPs (guidance chips + decent filler), and anything else that I missed.

IG-2000 would be themost obvious answer, as you really need more than one to get ful value out of the title and pilot abilities. JM5K would be another, due to the meta.
Elsewhere, there's not really that much, unless you want to swarm ships.
The Kihraxz is probably a good bet for a multi-purchase, as it has a couple of really good upgrade cards in the pack n Crackshot, predator and Glitterstim.
I only want one Decimator, and one TIE Punisher, and 0-1 of each kind of Shuttle. If I ever pick up Rebels I'll have a real problem because I only want one Millennium Falcon and there's no good way to buy one and still get all the different pilots. That doesn't bother me with small ships you'd realistically field multiples of but it's weird on the Falcon. Yes, I know it's technically a YT-1300 but in my mind it's only the Falcon and there's only one of them. I guess I'd have to look on eBay for the cards on one of them. Only one of most large ships really, other than Aggressors for obvious reasons and maybe JumpMasters because they're cheap enough that you can do it without hogging the whole list.

for me I can't see why I'd want to own more than 1 of most large-based ships.
I don't play tournaments and for me most large-based ships are iconic ships belonging to a certain character (or group of characters).
I don't think I'll buy more than 1 Tie Inquisitor (as being a prototype ship)
And S&V has pretty low priority on my list, so don't expect to buy many of them, just one of everything in order to try something different
I'm gearing up for epic play and because mixing new TFA stuff with the old seems a bit weird, I prioritise on the Galactic Civil War era and want to be able to field 3-ship squadrons of each type.
I love the look of the red Tie Defender (and always want more Royal Guard Interceptors), but seeing Imperial Veterans come with 4 titles, I probably buy just one of those and see if I can buy individual red Tie Defender models elsewhere.
I can only afford to spend around € 100,- a year on X-wing and my want-list keeps growing every year
So far, epic ships are the only single I own or plan to own.

All Large and Huge base ship I only have one. The exception is the second Lambda Shuttle I purchased for missions/scenarios.

very few ships small have been single ships for me (although in hindsight, no need for a 3rd Kihraxz or M3-A) and I usually find two ships of each is enough to keep me happy unless I'm looking for a specific build.
That said, I did limit myself to one G1-A with wave 7 and suspect that I will only get 1 of both the TIE/sf and Sabine's TIE's (initially at least). Until proven wrong (like I was with the TAP), I think one should do.
Many of the large-based ships I haven't felt the need to get a second of, as I either couldn't see myself running multiples or had no desire to customize and didn't need the cards from - YT-1300, YT-2400, the Decimator and the Lambda come to mind, although I have mad love for my triple-slavers and an almost guilty attraction towards JM5k's (which I have yet to field) so buying multiple large-base ships isn't something I'd adverse to.
I can see me getting 2 ARC's, 2 Protectorate's and two Quadjumpers, possibly more, but can't see any reason to consider multiples of HotR.
The only ships I own singles of are the Raider and the Blockade Runner, since you can't run more than one of those in Epic play. Everything else I usually buy enough to run a 100-point squad using the lowest priced generic (with room for upgrades). The Veterans and Aces packs led to some overkill, as made my initial purchases not knowing those were a possibility.
