So I'm going to nationals this year and I'm hung up on two lists. Please tell me what you think and which would be best to use.

It depends.

Vader/Decimator deals with Aces, and Carnor Jax/Omega Leader are both tech against Deadeye Jumpmasters.

Which stands the best chance against Dengaroo?

Decimator for dodging Dengar's front arc I guess.

I would say Carnor/OL is reasonable tech against Dengaroo; Carnor can potentially shut down the OCR4 train or go block Manaroo from taking tokens, and OL can tank Dengar on his own comfortably because none of Dengar's mods work on him. But it is going to be high variance. The Decimator is also OK, as Zuckus does nothing against it, but that Decimator isn't a good build, it really, really needs Engine Upgrade to work. I'd also really want VI rather than Adaptability to guarantee beating PS9 to the punch.

I'd also probably want Palp rather than Vader/Gunner as giving Scouts' and Dengars' highly reliable damage a quicker job of eating you is not... helping... Vader/Gunner is prime anti-palp-aces tech though.

Using Vader is optional though, if he wishes to conserve hit points when he comes up against Jumpmasters.

True, but then you've paid between 3 and 8 points out of your list to do nothing.

The decimator does have engine upgrade. And I chose adaptability over VI because I get 1 point initiative bid plus i can choose who shoots and moves first to make sure all my triggers activate

A 1-point bid is unlikely to be enough to get you initiative at the key points. It might just get you a roll-off against some lists.

A roll off is better odds then 100 points and never getting it

Which stands the best chance against Dengaroo?

Decimator for sure, although Whisper is actually not very good against Dengaroo. You definitely want to give away initiative if you can. You might think Whisper wants to shoot first for the extra green dice, but they are absolutely worthless against Dengaroo because of zuckuss, so its much more useful to be able to move last and have better opportunities to avoid Dengar's firing arc. To stand a chance, Whisper always wants an evade token and wants to avoid range 1 like the plague (of Dengar anyway). Manaroo is also a pain for Whisper since she can pass off whisper's TL (better to have gunner to allow FCS a chance against her).

Omega Leader is actually crap against Dengar. His counter measures chuck the target lock, then Dengar blasts him to pieces. Jax can also struggle against Dengar depending on dice: even without the ability to spend focus, sitting range 1 of Dengar is quite risky, even out of arc: Jax needs to have an evade token (in addition to autothrusters) to stand any chance (and even then he might take 1 or 2 damage depending on luck or lack thereof). Jax is good at chasing Manaroo, however (even if he isn't always able to use his ability).

Inquisitor is not terrible, as long as he can get a TL for that precious evade token, but he is very easy to block and that can be his doom if you are not careful. He is also good at chasing Manaroo, but his TL is usually not useful against her (jax becomes better at this since his range 1 potential is so much greater than Inquisitor's).

Yeah, I forgot about Countermeasures. As I keep doing when playing against it. It's really good at the moment.
