The issue I can see is the omni is going to get out maneuvered early and while Vess gets the target locks, your losing shots in early to mid rounds trying to get turned into a shooting position.

I agree with Ronu. The use of ST-321 is nice, but the shuttle is an unruly beast that can be out maneuvered. It is also a good blocker, so that might work to your advantage, but an experienced player would be expecting that. You're probably better of sticking in the Inquisitor.

Either the inquisitor or for a similar effect on a more maneuverable platform, a long range scanners bomber (add homing missiles for fully modded shots on engagement).

Why Ion Pulse on Bren? Seems an odd choice here your not doing a control theme with your Defender. It's not a heavy hitting ship as it and the LRS is not a great idea here. If your not 3 or more you can't get the lock to use said ordinance. Guidance chips and perhaps a munition with some punch is in order.

I keep wanting to put TIE/D on Vess. Is the x7 really worth it? Also if you do go x7, would Juke not be a good choice? Especially if you have vader to hunt aces.

The Trick on that becomes protecting Vess. His skill and the Tie titles can be a bit intimidating. So better players will focus on Vess as Vader can be flown circles around in certain cases depending on the ace match up. At PS 8 Vess limits the number of Aces trying to hit him first.

Since the colonel and Vader are set I had points left over and thought that the ion missile on Tomax would be a nice little cornrows control

I'd trade the HLC on the shuttle for Weapons Engineer and APL/IonProjector. The engineer allows Vessery to choose from multiple targets instead of just the one and the mod is for getting a little more out of blocking.

As far as TIE/d vs TIE/x7 goes I'd stick with /x7 here since Vessery is about the same threat as Vader and similarly durable with the free evade. If you go with /d Vessery becomes a bigger threat but a softer target so he'd probably go down faster.

For the EPT, again I think you got it right with VI rather than juke. PS8 will at least get you simultaneous fire with a lot of popular aces these days. With only one juke it effectively triggers only if you manage to strip all tokens with Vader on the same ship Vess is shooting at, or if you get a bump with the shuttle of course. It might be tough to get on Target against high PS though. This one is really more subjective than the /d vs /x7 argument since it's more dependant on play style and matchup.

Try some different things out though! I'd be tempted to try Lone Wolf on Vess for the defensive rerolls since you have an unlimited range support shuttle.
