When the Interdictor activates the targeting scrambler, can one of the 4 dice to be rerolled be the accuracy die you have used to target a defensive token?

No. Accuracy are "spent" when used so they are no longer in the Attack Pool to be rerolled.

Accuracy: The attacker can spend this icon to choose one of the defender’s defense tokens. The chosen defense token cannot be spent during this attack.

No, this was FAQ'd when the ISD and MC80 released with duplicate upgrade slots (offensive and defensive retrofit slots, respectively).
