Disarm them to begin with, then get creative with the scene, perhaps a wall collapses in this inferno, cutting off the maintenance crew, or making the fire much worse and out of control.
How many advantage would the GM allow me to disarm the group of troopers?

I will concede that since besalisk have 4 arms, Garon can disarm up to two opponents at the rate of 3 advantage spent per disarm, leaving 2 advantage remaining to spend.

Shouldn't we all be flying about the same speed if we are escorting the slow-moving transports? Or are we accelerating in a dangerous part of space (debris etc.) due to an incoming threat?
Currently, I'm just getting data for speeds once the Sith scramble fighters. It will be assumed that the transports land in the Jedi cruiser hangar bay before then. Your first piloting check tells me how far the Sith might manage to make it in the first round of space combat
I think there is room for us to be circling the transports, the speed is more indicative of us moving up and down the line instead of the speed of the entire convoy

True. And the lower-skilled pilots (that rolled low) don't dare doing that as fast as the others. That makes sense.
