Using the House Arryn Cards, Could I use thier set up for a seven player game of this? I have already made custom House Arryn tokens so I have the there house represented.

What changes, if any, would I need to make this as close to balanced as possible. Also what way to play would be the best: Feast of Crows objectives, would I change the number needed to win? Or 7 strongholds, would i need to lower the number of strongholds to win?

Yes. The biggest difference is the game board modification to the House Arryn areas (see image bellow), as well as some minor balance changes. Just check the zip files, they include start setup etc.
