Baffle triggers on receipt of the token. So I take the first, baffle it, then I'm still getting two more because of the wording of the jam action.

Nope. Baffle is effectively void against Jam unless you want to commit suicide. After each token is assigned it checks to see if there are three and if not assigns another. Baffling Jam just kills you if you keep doing it.

Jam is the only way someone with Baffle will be stressed even if they have the hp to deny it. Because the way its worded is they WILL have 3 stress before it stops assigning them one by one, stopping via checking if it has 3 or more yet.

Baffles would bring you down to 2, it checks, you are not at 3, you get another. You can literally suicide yourself with this if you wanted lol

Well, you could argue about whether Jan's check for "are there two tokens" comes before or after Baffle's trigger, couldn't you? So you might be left with one stress and one damage.

Jam can give a max of two stress unless they changed the Huge Ship Rules. I just checked version 3.0. With the new FAQ and timing table for attacks you could make a good argument for EB activating after the second stress was applied.
