Hey guys, the rules doesn't mention anything about a minimum encumbrance on the Lightsaber, is it possible to spend the advantage I rolled to reduce the basic lightsaber hilt I was constructing to encumbrance 0?

No, the Encumbrance of a lightsaber can't go below 1. Can't remember where I read that, but I distinctly recall reading it SOMEWHERE. When I'm back to my books I'll look it up and let you know.
The only place I'm seeing a stipulation of "minimum of 1" is Imbue Item. Everywhere else that refers to reducing Encumbrance, such as Advantages during crafting, or Superior, do not stipulate a minimum.
The lightsaber construction rules in the GM Kit only have the option to increase the encumbrance if you generate sufficient threat.
Bear in mind that lightsaber construction does not adhere to the various rules introduced in Special Modifications, being their own thing and vastly more simplified.
So if you're building a hilt from scratch, you're stuck with whatever the default encumbrance for that hilt type is as the lowest it can go.

F&D GM Kit, pg 24 lists Advantage and Triumph results right above the Threat and Despair results. It says you can spend 3 Advantage to reduce the encumbrance by 1. No mention of a minimum value.
Can't remember seeing any official rules on this, but personally I'd set the minimum encumbrance at 1.

Both the GM crafting rules, and the Superior Hilt mod allow you to reduce it by 1,with no stipulated minimum.
I don't get why everyone is clinging to a house ruled (being as there's no RAW to back it up) minimum 1.

Special Modification's Crafting rules do not cover LightSabres they have their own crafting rules that do not mention being able to reduce ENC (F&D GMKit pg 23-24). I did see the Reduce the ENC by one for three Advantages (I think this may have been mentioned as a error, I'll check)
The Superior Quality only reduces ENC on Armour not weapons. See pg 164 F&D

I don't think I missed anything so currently the only way to reduce the ENC of a Lightsabre is through the advanced construction rules. However I believe this is like an error of omission in the RAW as it is inconsistent with other modding rules.

I don't think I missed anything so even though it's not explicitly said in the RAW that there is a minimum ENC value for a Lightsabre the is no RAW way to actually reduce the ENC value to below one. So as there currently isn't a way to do it the minimum ENC for a Lightsabre is 1.
Unless I have a different GM Kit than everybody else...

Any (Advantage) results on the construction check can be used to expedite the assembly process. The character may spend (1 Advantage) to reduce the cost of materials by 25 credits per (Advantage) spent (to a minimum of 100), or add customization or ornamentation to the hilt (this does not have any mechanical benefit, but can make the hilt look interesting and unique at the player’s discretion). (3 Advantages) may be spent to decrease the encumbrance of the hilt by one.
You're right though, Superior reduces encumbrance on armor but not weapons.
