I am looking to get the EotE GM kit but it is sold out everywhere. Would I be able to pick up on of the others and use it for when my group plays with the EotE rules?

The kits all come with a GM screen, an adventure, and a few pages of extra rules. You can buy any GM kit, but the AoR one is probably a better bet.
You can use any screen with any game, but because of the equipment, the AoR screen is probably a better match for you than the F&D one. It has more equipment overlap without all the lightsaber stuff.
The AoR adventure is about being on a Rebel Nebulon-B that gets taken over by rogue droids - you could run that with smugglers who do some work for the Rebellion.
The extra rules in the AoR kit are about squad based combat, which is a great way to protect a Nemesis or other important NPC in combat. They are useful rules for EotE.

Yep to put a little more info on this, EotE GM Kit has rules for creating a good Nemesis, both in the type of Adversary they are and the level of emphasis on them in the story. Includes optional rules to beef up said Nemesis characters.
AoR GM Kit has squad rules which are handy for keeping Nemeses' alive as well as keeping your players alive if they are flying in a formation of X-Wings with a bunch of minions.
FaD GM Kit has Lightsaber construction rules.

It's worth mentioning that each screen has page numbers that reference the CRB for that particular line.

From what I understand, the screens are more or less the same. EotE GM Screen covers advantage/threat/triumph/despair in combat, crit tables for people and ships, the dice, the weapons list from the CRB, maneuvers and actions you can take in structured play (combat/chase) and a couple other things.
The booklet is what includes the adventure and the Nemesis rules.
