I've recently started to play with Han Solo in my squad. Please can someone clarify his ability. When you think you've got a bad attack roll with Han, can you use his pilot ability like target lock and only reroll the number of dice you want to or do you have to scrap his entire roll and reroll the whole lot?

If you roll one with Han's ability you roll all of them (unless you've already rerolled that particular die).
So if I rolled badly and rerolled all my dice using Han's ability, does that mean if Han's reroll is still bad and I have a target lock, can I not use it because I've already rerolled once or does Han's ability over-ride that rule and still allow me to use it?

Dice can only be rerolled once. If you use Han's ability you can't spend the Target Lock for another dice reroll.
Treat target lock as an attempt to fine-tune a decent roll. Treat Han as a do-over.
Of course, you could for whatever reason spend the target lock to roll some, and then use Han to roll the remainder that the TL didn't reroll, but it's safe to assume the dice you don't reroll with the TL are results you'd want to keep.
In fact, there is nearly no reason to use a Target Lock with Han, except if you have a Missile Upgrade, then this is good because you can reroll your bad roll with Han on the missile.

It might make sense if you have Gunner and are attacking a lower agility target. If you roll something like "hit, eyeball, miss, miss" on a range one shot, you spend the TL to reroll everything but the hit, and don't improve your results. You then use Han to reroll your hit to make sure you miss to trigger Gunner.
Most of the time, Focus will be better and because you never know your roll result, you take the better action... any most of the time, I'll use Engine Upgrade or Evade from Falcon Title...
