Remove the Cortosis trait from the Refined Cortosis staff? Add Linked and Unwieldy 3?

Quarterstaff: Melee, damage +2, critical 5, engaged, 4 encumbrance, 2 HP, 100 credits, rarity 2, Cumbersome 2, Defensive 1, Disorient 3, Unwieldy 3. Two-handed.
Cumbersome and Unweildy? The quarterstaff is a very simple weapon to use even for those of below average size/strength and coordination, so I'm not in agreement on those two traits.

The closest weapons we have to a quaterstaff (the Electrostaff and the double saber) both have Unweildy. So I would reason it applies.

mainly because hitting yourself with the end of an Elecro Staff or Sabre is a lot worse than a simple stick.

I think that was a copy/paste error. So, yeah, Linked 1.

And specifically, because there's a very narrow portion of the weapon that the user can (safely) grip. With a quarterstaff, no such issue applies.

No, the closest we have is the Cortosis Staff. Just remove cortosis and lower the Damage to Brawn +2 and you should be fine.
Special modifications is your friend here, there is a template for a staff, although you have both 1h and 2h versions . However I agree with othere here by just removing cortosis from the cortosis staff.
The other method would be to use a force pike, although its a different beast by having a tip more like a spear, both spears and staffs were sometimes used in the same manner esp outside of mass combat.
You won't see an entry for "Rey's staff" because she made it herself. Otherwise it's just a quarterstaff.
Desperate Allies has the Staff of Office, which doubles as a reasonable melee weapon:
Melee, +2 dmg, Crit 4, Encum 3, HP2, Defensive 1, Disorient 2. Adds 2 blue dice when doing the Gandalf thing and convincing goons to let you keep your humble staff.
Not a bad weapon, considering it's just a stick of wood or light metal, without any fancy materials.
I don't like Linked, but I would allow the player to use the "Two Weapon Fighting" rule. Otherwise I'd go with Maelora's suggestion.
I've just used the gaffi stick from EotE for a PC that wanted a fighting staff not too unlike Rey's. It's not any sort of uber-weapon, but it does the job pretty well for a PC that's not focused on being a melee combatant.

Best one yet, i always imagined this as a sceptre and about 1m long but theres no reason it cant be longer.

It says it can be a sceptre or a staff, but either way it requires two hands to wield, so I'd assume it was fairly long. Our Diplomat has one, though she's rarely had to kill stormtroopers with it.
Also, everyone Rey fights is pretty much a Minion, so any Triumph or crit is pretty much an instakill. I'd say that includes Finn, though Darth Manbaby might just be a weak Rival.

As others have said it's basically a metal staff so I'd go with the most basic staff you can find and thats the Refined Cortosis Staff minus the Cortosis. It's got 2 HPs to add other qualities.
If you want you could use the Gaffi Stick, which I would accept. Take it's stats with the Defensive and Disorient but no HPs.
More than this and you start down the Munchkin path, forever will f*ck your game up, consume you it will...
Perhaps The Force Awakens Beginner Game will have stats for a similar weapon...?
