In the middle of a scrum (enemy ship at range 1), does Fett get to reroll 2+ dice each attack? Lone wolf+Fett ability during attack; ditto on each defense as well?

Yes, they will both take effect and allow rerolling of one blank and/or up to #of enemies in range 1 of boba (note that they can be anywhere in range 1, in or out of arc) dice. Each die may only be rerolled once, so if you Lone Wolf a blank and it comes up blank you're not able to reroll it again via Boba's ability.
