So I currently have the Dark Power agenda card. I noticed that Sorin gains the ability to use an action to add two threat and have an optional deployment. If the Sorin class tank is destroyed, can I redeploy an MC-3? And if so, is it considered to be a sorin class tank?

When a non-unique group is defeated, the deployment card returns to your hand. You can redeploy it by paying the threat cost. But then it would be exactly the group that the deployment card specifies - i.e. it no longer has any abilities mission rules gave it when it was deployed as a reserved group.
