I am pretty sure this question has been answered already but I am just not able to find it. So here once more:

Is it possible to have more than one shield token on Gonk? I know you can use him only once per turn but is it possible to "load" the card with several tokens or only with one? The card text isn't really clear on this.

The card text does not limit it, so there isn't a limit other than the available actions and the fact that you can only store a shield once per turn.

In practice I've rarely seen anyone get more than two or three without using Experimental Interface, and even then, not a LOT more.

I would use it in epic-format or custom format which both have a different meta. In both a Gonk could be nice. Just needed to clarify if you can load the card or not. If it was possible it would be far stronger

You can.

Gonk can hold any number but they need to be charged one at a time. Of course having token on Gonk doesn't do any good and they can only transfer to the ship one at a time as well with a limit on maxing out the ship's shield rating.

Yes you can avoid combat and fill him up with shield tokens but can only take one per turn just like only add one per turn.
