I want to run a list with Vessery and Countess Ryad with /D and Ion Cannons.

This leaves me with 25 points to work with. Two ideas I have with where to spend the points are to give Ryad PTL and Twin Ion Engines mk2. This with a very light Omega Leader as below.

Colonel Vessery (38) - TIE Defender

Adaptability (0), Ion Cannon (3), TIE/D (0)

Countess Ryad (41) - TIE Defender

Push The Limit (3), Ion Cannon (3), TIE/D (0), Twin Ion Engine Mk. II (1)

"Omega Leader" (21) - TIE/FO Fighter

Adaptability (0)

Otherwise I could drop Ryad's PTL to be able to give Omega Leader Juke and still have 2 points somewhere else.

Do any of you have any suggestions for me? I am open to anything, I just want to keep both Vessery and Ryad with /D title and Ion Cannons.

Why not a pair of Academy Pilots? With two Ion Cannons you know exactly where the target/s will be so you you can target or bump them with ease.

I like a single blocker with two Ion/Ds. The blocker helps a ton against U-boats. That would leave some points to upgrade Vessery a bit. He could get a better EPT and maybe a defensive modification.

Zeta Leader (20) + Wired (1) + Comm Relay (3) = 24 points plus an initiative bid.

25 points? Might I suggest an Alpha Squadron Pilot for a blocker? He hits hard and has the option of boost or barrel roll. Still gives you 7 points of upgrades for your defenders, and maybe you could even squeeze Autothrusters in there, though it isn't necessary. The TIE interceptor is a glass cannon, and because it presents a bigger threat than a TIE fighter, it will probably draw aggro away from the defenders. Enjoy him while he lasts.

Alternatively, Epsilon Squadron Pilot with Weapons Guidance. He hits surprisingly reliably. Less punch than Alpha, but more durability at 17 points. No boost, though.

I've seen Weapons Guidance on a few things. If I go as an all out attacker with Zeta Leader, I use Wired+Weapons Guidance+Twin Ion. Hits consistently for 2 hits, and quite often is putting in 3. Not bad for a TIE at 24 points.

There's only 21 points after the Defenders left for blockers in the OP's list. Dropping PTL from Ryad is a bad idea unless you replace it with Predator or something.

EDIT: Facepalm! Completely forgot about Vessery's ability, lol! Make that Outmaneuver, and give me the Epsilon Sq. Pilot with Weapons Guidance. I may go Comm Relay for the full 100 points.

Zeta Leader with wired for 21pts gets my vote. If you can re-jig stuff then another option is good old Doom Shuttle.
