On Order cards they make reference to bonuses for casting your chosen order spells - what would be the point of this if you would be limited to your own order only, why not print the extra <W> in the spell cards initially? Bonus applies always exclusively.
I believe it's stated on the final (non-advertisement) page in each of the magic books.

Not so, because there's petty magic that doesn't have an order trait.
Actually I don't think there is anything in the rulebook preventing it. However I do beleive the requirements of the spell cards list the order as one of the requireements. So as a bright mage you could purchase a grey order spell but you couldn't use it because you do not meet the requiremetns of being a grey mage.
I don't think the rules specifically state that you cannot buy other Order abilities but the background/setting material kind of implies you can't.
Each of the Mage Orders taps into a specific Wind of Magic, so buying another Orders spell would be allowing that mage to essentially tap into more than one Wind something which is apparently beyond the skills of a human mage according to ToM.
Similarly a priest buying blessings from another Faith would mean that they are recieving Gifts from another deity. So in this case which deity do they serve? And pimping yourself to another god might offend the original... " Hey Sigmar mate, You know you're pretty cool and all that, but this Shallya Chicks got some wicked healing stuff so you wouldn't mind if I prayed to her for a little bit? "

I may not be remembering correct, but read the back of the wizard careers. I think it does state you pick one order and that's it - that's the only order you can belong to, and since as already pointed out, you must have an order trait to cast a spell, if you can't change orders, you can't cast those spells.
I could be wrong though.

It does but where does it state that once an Order or Faith is chosen is restricted to just those spells/blessings?
On the Action card where it states the Order is in the Traits section, not the restriction section. The traits currently seem to be of little meaning (I've not gone through every single card to see if any interact with any). Regardless, Traits do not impose restrictions.
Anyways, in the back of both the Magic and the Divine book (as stated, the 2nd last page) it does state that you can only take spells/blessings from your Order/Faith. So there we go.
If you read the "flavor text" the setting explicitly states that human wizards can only learn and control one wind of magic. It states the same for priests.
That's not to say future expansions will not allow certain careers the flexibility. In keeping with 2ed, witches and warlocks would be allowed to cast spells from different orders.

This should really be reworded to say that you can't take spells/blessings from another Order/Faith, given the universal spells/blessings.
Page 35 of the Main Rulebook, Advancement Options, General Career Advances, Action Card: "...only wizards can acquire new spells, and even then, the :wizard can only acquire spells from his particular College of Magic."
Tome of Mysteries, page 47: "Over the course of his wizardly careers, the character can only acquire and cast spells from his chosen school."
Tome of Blessings, page 46: "Over the course of his priestly careers, the character can only acquire and invoke blessings from his chosen diety."
This answers the question of whether or not you can buy spells/invocations out of other Orders/Faiths.
Wizards start the game with a number of petty magic spells. Priests start the game with a number of minor blessings. They do not acquire them with advances and indeed there are no more of these type action cards to be had. The only potentially confusing parts are the words cast and invoke in the sentences from ToM and ToB, but it is clear to me that these statements are about the acquisition of new spells/blessings not the ability (or inability) to cast petty magic or minor blessings.

We played like this intuitively as of course it would have no meaning what college you belong to if everyone was casting Fireballs.
