This wouldn't normally come up since SLAM is an action, but if you have multiple stress tokens on a K-Wing with Chopper as a crew, can you do green maneuver, take a damage token (I assume you can take shield damage) using Chopper to take an action in order to SLAM, then do a second green maneuver, do you remove a stress token with each green maneuver?

Yes, because you are choosing the maneuver from the dial. There is no reveal step but you still perform the maneuver and its color(difficulty).

And to confirm, Chopper's damage is just like attack damage - applied to shields first if you have any.

The only time that's not true is when it specifies that damage CARDS are dealt. Those go straight onto hull and don't affect shields.
