No there isn't. It's absolutely unquestionable that the relevant a-wings (i.e. ones with high enough PS to use the title) can equip and benefit from both cards.

Original +1 +1 is original +2, nothing anywhere says otherwise.
There's also the fact to consider that their PS modifications happen at different times - VI is applied during list building, then the ship is placed at the VI pilot skill, and the Adaptability then takes effect to change its PS up or down by 1.
However a ps 11 a-wing doesn't get you much but it does lower the damage you could do, tycho wants rage or something to max out his potential damage.
The only one it might conceivably be worthwhile on is Jake, who comes with some built in action economy.

Isn't that in the context of things that set the pilot skill to a particular number, though? Like Mux vs Roark, or Roark vs Injured Pilot?

The text in the FAQ talks about game effects that alter pilot skill in general, and does not specify that it has to alter to a particular number. The example in that parapraph uses fixed Pilot Skill effects, though (Damaged Cockpit, Swarm tactics).
Edited by UbulVI and Adaptability should have no trouble stacking although the effectiveness of the combo is questionable.
I would be not different from having two effects that increase or decrease any other ability. If you have the Punisher giving you +1 die on your primary weapon and then get another effect giving you another die before you attack then both will certainly stack. If you get those things going and then get something that says you attack with zero dice that cancels both of them out.

Yeah, I guess I'm reading a distinction into that that isn't there. And if the "only the most recent applies" rule doesn't care about things that only add/subtract rather than setting to a new number, then we're back to the question of why somebody with VI who gets Muxed isn't PS2.
