It is more about which species do not have "Force traditions" or subtle connections.

The Force is in all living things. Only some have a strong enough connection to become Force users. The connection to the force can manifest in an entire species.

Zeltrons can sense emotions, Togruta have spatial awareness, Kel Dors have an ancient tradition of sages.

The only species I recall reading about as absolutely "Force-Blind" was the Ssi-Ruuk from The Truce at Bakura. The Yuuzhan Vong were "disconnected" from the Force, and so couldn't be Force-Sensitive and couldn't be sensed or affected by the Force (though this varied wildly from author to author in the series), but other than those, every species in the galaxy can be Force-Sensitive.
