looking for a cannon/legends location for a "starship show"

So, there are several types of possibilities here.

One is like the Geneva Auto Show, or others like that in Detroit, Tokyo, etc…. This is primarily where the big manufacturers can show of their latest concept car designs that will never actually be made, as well as showing off the latest models that are actually being produced.

Another would be like the Barrett-Jackson Auto Auction for antique and classic cars — or the Pebble Beach Concours d'Elégance auction. Where one-of-a-kind multi-million dollar vehicles are put on display and sold.

Another idea would be to do a “Top Gear” type of show, where instead of being an annual event that would draw large crowds to a particular location, you record segments at various locations for broadcast in episodic format, and maybe you have a Space Jeremy Clarkson being the lead presenter.

I think any one of these three ideas could be made to work well.

It's highly likely that a world in the Corporate Sector may have been developed exclusively for tech expos and product demonstrations for the numerous corporations that form the CSA.

does anyone know the name of a particularly exotic/unusual/classic star fighter that a pilot would get excited about seeing

I'd say anything with Nubian drives, like the Theed Palace Space Vessel Engineering Corps, or some other shipyards use. Nubain drives are renowned as very powerful and top-line engines. So a tricked up new version of the classic Naboo Fighter might be a curiosity a figher ace might take note of ..

I'd say even a classic pre-Clone Wars or Clone Wars-era N-1 would draw a lot of spectators. That's not to say that a more modern Naboo starfighter (or courier or light transport) wouldn't draw a lot of interest and a lot of eyeballs, just as a modern Ferrari might, but the N-1 would probably be considered a classic - like a Jaguar E-type or Mercedes-Benz 300 SL.

I would imagine that Sienar's latest TIEs would also draw eyes, although they would probably be geared more toward military contracts and probably be more technology demonstrators than even military prototypes (like most post-Soviet Russian fighters, such as the Su-47 and MiG-1.44) - and maybe some more commercial-oriented fighters and transports made by Sienar with TIE-derived design influence, like a modern Star Courier (Maul's Sith Infiltrator). Plus Kuat fighters that are modernized versions of the Eta-2 Actis and Alpha-3 Nimbus.

Along those lines, it might be neat - depending on exact time period - to see Incom-manufactured variants of the Z-95, some of which might point the way to the X-wing and maybe even some T-65 pre-production prototypes in Imperial livery.

Why would a show be limited to just one planet? Auto shows and air shows travel around the US, so why wouldn't they do the same in the Star Wars universe?

And I think the Empire would do shows with their military equipment. The Nazis did, so did the Soviet Union and North Korea. The US does, as do most countries. They might not do them out in the outer rim which isn't fully under their control, but they would in various Inner Rim and Core worlds as part of their propaganda machine.

I'd probably put an Imperial air show on a world like Lothal, where major Sienar factories are located.
