Understand that her ability works once per attack so with tlt it's one extra dice only not one each per shot

Can she give the bonus to multiple ships per round eg three other ships and take three stress?

As long as she still actually receives it for a bit. If the mitigation intercepts the stress, a la Captain Yorr, then the effect you're paying for by receiving stress doesn't happen either.

There is currently no way for her to loose stress during the combat round, so she can only affect one attack per round.
