Pod-racing notwithstanding, he actually fought in the Clone Wars, both as a pilot (the prequels) and as a military general officer (the Clone Wars show). Having "the force" shouldn't be an automatic "I'm uber at everything" card. Should we assume that the Coruscant Master-Chef is also a force user?
Joke aside, Luke wasn't necessarily all that awesome in a snowspeeder to be honest, and also spectacularly crashed his X-Wing on Dagobah.... My opinion is that Ep.VIII Rey doesn't have the same "pilot skill and combat experience" that an Ep.VI Luke Skywalker has. She might be a prodigy, but she lacks actual combat experience.
Who knows, maybe she becomes an interstellar Top Ace Master Chef in Ep.9, and FFG has info we don't have...

It's not like it would be IMPOSSIBLE to explain how Rey got her abilities - certainly, there are better pilots/force users/mechanics/etc than her in the series, already. It's just that the movie makes no attempt to do so at all. It doesn't even hint that there IS an explanation, just...*pow*...she's immediately perfect at everything she tries.
At least little Annie in the prequels had an "unusually high midichlorian count", which everyone groaned at, and didn't really get elaborated on...but it meant there was a reason he was closest-character-to-Rey's-level-of-unnaturally-good-at-everything.
The most common anti-midichlorian complaint is "WE DON'T NEED AN ANSWER TO EVERYTHING"
It's a crazy day when people start citing "Midichlorians" as good writing.
I didn't say it was good writing - indeed, it was pretty hacky writing. But at least it indicated there was an explanation. We got more of them in the OT - Luke's father was the 'greatest star pilot in the galaxy'...and he was pretty good flying, himself. So it would follow he could probably handle an X-Wing with some training (even though he still almost got shot down twice and had to be saved by Wedge then Han). Han Solo, himself, was a decent pilot - but had a long history as a smuggler, trained at the Imperial Academy, and even then screwed up pretty regularly. They didn't (at the time) go into detail what those things MEANT...but clearly indicated 'hey this character is pretty good, and there is a reason for it, we'll get to that later'.

It's obvious that she's strong in the Force. There are six previous movies that show how the Force makes someone really badass. What more explanation do you need?
Part of what's throwing people off - I speculate - is part of the intention. I don't think that we were meant to realize that Rey was the main character, until she started doing the really amazing stuff in the movie. In the trailers and looking at the toys that came out, and the available imagery, you would have thought that Rey was supporting cast. In the trailer you saw Finn with the lightsaber, not Rey.
I think they wanted to surprise us with Rey. The fact that she was good at stuff was supposed to be explained after-the-fact with the revelation that she's the force-sensitive one; not Finn or anyone else.
I don't know anyone who thought fin would end up the Jedi, it was obvious really that it would be Ray because she was from nottatooine.
What did surprise me was how insignificant Poe was given he was so heavily featured in advertising.

It would explain why he basically disappears in the entire midsection of the movie. That probably is one of the few things that actually bothers me, but then again they also wanted to build a bridge between Rey and Finn, something that a bromance would have likely made difficult.
So it's really best to kind of think of him as the Wedge crossed with Lando, charming fellow, but ultimately his job is to actually save the day while the heroes are fighting their small scale duels. XD (That of course is said in jest. I know he couldn't have pulled the shot off without the charges, because this time the weak point wasn't a weak point! XD)
Regarding Poe firing over a dozen torpedoes into the oscillator: The fuselage of the Black One is filled with torpedoes, machismo and rainbows. Don't question the Poe!

He's probably also the best pilot in the galaxy. I mean, he flew through an X-wing sized hole not once, but twice. He may have a bigger role in Episode VIII.

Anyways - anyone tried Rey with the new title ? Had a game earlier today, Rey + Kanan + Kyle + PTL + new title + Engine upgrade. Suuuuper fun to fly, oddly enough, but having both PTL and Kyle feels excessive, I think the build definitely gets improved by switching Kyle for a 3PO to ensure evades and improve survavability. Rey wants to be in the thick of it, shooting through her front and the Falcon doesn't have that many actions (target lock is pointless if you can get a target in arc). Doing a 3-white Sloop every turn is *really* good, honestly and with a boost it makes for a pretty nifty ship. Would have loved to have a natural barrel roll on it - still not sold by PTL, so maybe an expert handling could be worth.

Hera from Star Wars Rebels is a crazy good pilot to the point she could basically punk Darth Vader, but she's PS7 because her ability becomes absurd at anything higher in a way that's unhealthy to the game experience. Similarly, Dengar's never been shown as a particularly amazing pilot in the EU (Beyond LOL Corellians), but he's PS9 because Scum needed another PS9 ship and like Rey there's more incentive to actually use his ability when you can move last.

My feeling as well. As I already wrote back in december15 when summing up my impression from TFA:
"Poe not afraid of Kylo: Poe seems to be totally reckless, reckless to a degree that it will get him killed in the end. Really fitting for a fighter ace."
The novels are not needed. Except for the fans that feel that they need every little thing explained to them.
Rey says she is a pilot, why do you need more than that.
Because flying a freighter is nothing like a fighter bomber, from the falcon cockpit you do not have any clue how close the port side is to an obstruction so if you've never flown it before there's no way you fly through terrain the way she did.
I've been flying star fighters 30 years and I couldn't take the falcon through that wreck, and if I can't do it then some scavenger from tatooine Jr wouldn't do it without being Mary sue.
Although Star Wars i WW2 planes in space. Do you really believe that the Falcon has no proximity sensors on the far side, and is flown completely visual??

Obviously she's not as good as Vader, but it's just an example of how good a pilot she is. Another example was when she flew the B-Wing prototype and managed to get it doing all sort of ridiculous agile stuff.
You are right that she got shot up by Fenn Rau's forces, though that seems to be the inevitable result of piloting an A-Wing in Rebels.
And she was intentionally making herself a target to help Phoenix Squadron escape.
