I love how people always whine that Hollywood leaves nothing to the imagination nowadays, but when Reys past is left open and mysterious its immediatly unbelievable and bad writing. It is so obvious that she had some contact with the force before she was left at Jakku (heavily implied when the lightsaber throws her right back to the moment she was left). I would be extremely suprised if her time with Luke doesn't uncover a lot of what happened to her. Also when she says she is a pilot we have no reason to doubt that at all, since she didn't want to leave Jakku.
Think of it what you want, I get why you wouldn't like her portrayal, but don't be suprised when someone doesn't share your opinion on this. There are good arguments why Rey has shown the way she was in TFA.
Secondary sources also confirmed that she did fly a ship before the Falcon and spend all of her free time on a flight sim. Irrelevant in the context of the movie, but very much so when discussing her PS in the game. Heroes of the Resistance looks to be a flavourfull addition to the game that won't fix unerpowered ships, but rather mistakes that were made when creating the initial TFA content so early.
Here is Rey in a nutshell.
As mentioned before, Rey is PS8 for game mechanic reasons, period. FFG doesn't give much about background when creating the pilot's PS (except for the iconic dudes being high PS). The PS8 shows that FFG is aware of the PS problem in the game and has no idea (and/or motivation) to correct it; with PS lower than 8 Rey would struggle to perform well on the table - although the lame S-loop title is working great for her of course.
Really there should be something like a ban for certain elite upgrades on the pilot cards. Just at the bottom of the text area, like "Ban: veteran instinct". Several pilots seem ok with their initial PS, but VI-ing them up to 9+ is just silly. Rey being PS 10, bypassing the Vader and Wedge? Really? And VI is not unreasonable on her, with a pilot ability like that.

PS is mostly about reflexes. The Force lets you see into the future a few seconds, and gives you amazing-seeming reflexes. How Wedge "Pull out Wedge, you can't do any good back there" manages to trump Skywalker in PS is a good question.

Um honestly the shaft Lando was flying though was way way tighter overall.
But ya sounds about right PS wise I suppose. Just imagine if Rey would have spent another 10 years on that desert planet she could have been a PS 12!
To be fair, this representation of Rey has to be true across the 3 movies; which is probably why she's an 8 to reflect the two movies we have yet to see. In the same way that they hedged their bets on Poe being an 8, because they are more trying to give an all encompassing character.
I would say 7 or 8 is reasonable. She shown to have a high piloting capability in a ship she was unfamiliar with, flying through the interior of a Star Destroyer with said setbacks, the "having to fly awkward so Finn can shoot" counts toward it. Clearly not on the scale of Han's run, but thats why he's a 9 I guess.
That being said, I don't really recall a thing she was actually bad at. Kind of like the entire crew of the Falcon rolled up into one (Mechanics was chewies thing, I think.)

Wedge is a prodigy just like Fel or Han or Dengar
Able to predict enemy maneuver by sheer awesome and experience.
But back to the context, FFG has clearly factored future "character" development into the PS8 since the opportunities to update her will be few and far between. Poe is the first to get the treatment, which is a bit sad given how long Luke has been waiting to be relevant
Luke remains one of the best pilot cards for the X-wing.

Luke isn't a Mary Sue. Mostly cuz Luke is a ****. A whiny farm boy who gets eaten by wampas, toyed with in combat with Vader, and kisses his sister and likes it.
All that said I really wish Luke's pilot card was more relevant in this game. It's really sad. The main **** character of the most important trilogy is a ****.
I mean Vader was bad for a while too. That was bad design on ffgs part too.
By next movie I think it'll be pretty obvious Rey will be ps8. And honestly I'm not that miffed about it cuz of the same value for lLuke. And she's an important character. And she's not 9 thank goodness.
Although I can really see Vi on her. Making her a major pain for Whisper once again.

To b fair on the novels later, Luke repeatedly stated that Wedge was very powerful in the force and could be trained into a Jedi but he refused to be.

I'll put in my two cents.
Rey manages to fly a ship that hasn't flown in years that needed a copilot without a copilot, through a wrecked Star Destroyer, and pulls of two incredible moves one after the other with, for the most part, sim training. Not to mention that one of those move lined up a shot for Finn after the turret gets locked. Really I questioned the YT-1300's cockpit layout more then Rey's piloting skills. She deserves a PS of 8.

Force sensitivity and the precognitive reflexes it gives is an amazing buff to your piloting ability. Luke managed to survive the Battle of Yavin and being attacked by Vader. His piloting experience? A beaten up T-16 Skyhopper. When it's incredibly high Force Sensitivity like Rey or a Skywalker PS8's to be expected.
It makes Han, Dengar, Wedge, Soontir and Talonbane all that more impressive for being PS9 without it.

Saint Mary in an airspeeder, that's exactly what's wrong with her, she is too awesome and too good at (every)things and midichlorians.
Luke managed to be awesome, yet by no means perfect and self-sufficient, in the Battle of Yavin alone he was saved at least two times, not even counting Biggs' sacrifice and Integrated Astromech.
