After doing a red maneuver, you acquire a target lock because of the astromech, then remove stress because of the pilot ability. Does this mean you are free to do a action that turn as well?

For Hobbie, you could always Experimental Interface + R7-T1.
I feel Targeting Astromech is a better fit on ships with more Red maneuvers like T-70s or with an EPT for Stay on Target.
I have the same question and I'm not sold on just a generic yes. If the astromech said ability is triggered off the k turn wouldn't the target lock be placed before stress. I really think and far is needed to determine when the target lock is placed before or after the check pilot stress step.
Checking pilot stress is part of the whole maneuver step. Therefore, Targeting Astromech triggers afterward, and removes the stress. Satisfied?

Targeting Astromech triggers on a red manoeuvre, not the application of a stress token, so it could trigger after all the sub-steps have been completed and still be okay. It's not an action to acquire the target lock, so the stress token doesn't upset anything.

You can get a TL and focus every turn for fully modded attacks, and the dropped stress to do it again. If you think you might K-turn, keep the TL. Pretty good chances of getting damage though every turn.

Remember to use the updated rules as this was one of the biggest changes with the update that came at the time that the TFA Core set was released. Using the original rules, Hobbie would get the TL, then the stress, and then lose the stress when he spent the TL.

Yeah it would be great, but 27 points of Hobbie the Defender is even better because you can use him as a jouster until he is dead and have dealt an amazing amount of damage for the price.

Which doesn't serve to enable Stay On Target/Targetting Astromech, as noted above.
I'm hoping they might put out a title or mod that lets you use a non-unique astromech and a unique one together on a T65 only. That would be fun.
