I am looking to get a friend into play X-wing he is excited about it. Now I need some help as I am a bit rusty and coming off a 1.5 year not playing at all time frame, I own 1 of everything out (exception cr90) what are some lists that allow for me to highlight what ships can do and really the heart of x-wing, I would love for some lists that show case different upgrades but are not crazy out of control, for each faction, with that as a back drop any good ideas. Thanks in advance.

you could try to run a deci/soontir list or any big ship with a ton of upgrades on it

As for the latter, I've been having a lot of fun coming up with thematic, 60-point squads using just the TFA Core Set and a TIE/fo Fighter and one each of the T-70 X-wing expansion packs. I limit it to 60 points so that you have to make some tough decisions in squad building, and you can't "have it all."
I almost think that for somebody just starting out, you should definitely include Darth Vader on the Imperials and Luke Skywalker on the Rebels.
I'd go for a modern take on Yavin - arguably the iconic dogfight.
Rebels:
Luke Skywalker, R2-D2, Draw Their Fire, Integrated Astromech.
Wedge Antilles, R7-T1, Push The Limit , Proton Torpedos, Integrated Astromech.
Biggs Darklighter, R4-D6, Integrated Astromech.

Good questions, He is a Warhammer gamer that loves to paint and he is a father of a couple kids so he does not get much time for gaming. He willing to give x-wing a try as it would let our familys get together and play something fun. He has seen the star wars movies and is not a super nerd like me. I don't need to just have x-wings vs tie fighters but that does make me think if the core set is the easiest to teach with. I believe he is going to pick up a core set soon.
The above gives you a good taste of the game whilst being recognisable if all you've seen is the films. You know who all the pilots are even if you've not read books or played the Lucasarts games, or seen rebels.

- Regeneration (Luke)

Personally I would go for omega leader juke+comms and zeta leader wired and have a three point initiative bid...
