This something that has been puzzling me for a while. In each of the core books we have a table that tells us the cost, rarity, and vehicle size for installing upgraded weapons.

Is there anywhere that gives us the actual stats of the weapons on the list, range, damage, crit rating etc?

Or am I just going mad?

Yes, table 7-1 has all of them.

In EotE you´ll find the table at the beginning of the Vehicle-Fight chapter if I remember correctly (and if the English Version uses the same layout as my german does ^^")

This has been one of the more … annoying … things that I’ve found about the books.

They could have done just one table with all that information, or at least put the two tables much closer together.

Having to flip back and forth is a real pain — even if you have put Post-it note tabs on all the important pages in the book.

I know of people who, when they started to use post-its for everything they deemed important enough, would come just short of doubling their book's thickness...
