is his ability good for multiple defenses as in if attacked by two or more different ships? and or what if attacked by a single ship twice? I know you can take an action and if you boost out of range they cant fire on you again per FAQ. but if they could fire on you again could you take another action after each defense?

His pilot ability is not limited to one per round, so you can use it after each attack.

As long as you are not stressed, yes - each attack provokes his ability.

Important to note that you cannot perform the same action twice in the same round.. So whatever you may do during the activation phase is no longer an option after an attack.
