I have a question regarding the ability of asteroids to obstruct my line of fire. If a hostile X-Wing finishes his move ON the asteroid does he get an extra defense dice? Does he even get to attack me?

only if part of the asteroid is showing underneath and they are shooting through it.
though if this is the case you could be taking more damage as you fly out of it next turn
If he ends on an asteroid, no shooting for him. If he ends on a Debris Cloud, he can shoot as normally as any other stressed pilot.

They are obstacles that come in the Outrider and Decimator expansions.

It is a different type of obstacle. They come with the YT-2400 and VT-49 expansions.

Asteroids do not concern me admiral.
And, if on the ship's next turn when it moves off the asteroid, if the move template overlaps said asteroid, they must roll for damage again and lose their action. But assuming they didn't land on another one, they get to shoot.
