If I bump into a ship can I use the Dauntless Title to Focus and then Push the Limit for Target Lock before I get the stress? Do I get the first stress before I can push the limit? Do I get 2 stress?

It's a standard piece of effect nesting; Push the Limit triggers whenever you perform another action, and so can interrupt Dauntless before the stress is applied. The full process would be:
- Overlap ship, triggering Dauntless.
- Perform action from Dauntless, triggering Push the Limit.
- Perform action from Push the Limit.
- Receive stress from Push the Limit.
- Receive stress from Dauntless.
