In the EU, is there ever a case of a bounty hunter or smuggler using a Lambda Shuttle?

Self Explanatory

There are many smugglers, especially of people these days, in the EU, but not so many bounty hunters which is more of a USA thing.

Yes-ish, it is mentioned very briefly at the end of the Wraith Squadron cycle of the X-Wing novels. One of the crew members is an ewok!

In TIE Fighter and X-wing pirates used them. This however could be due to a general lack of models in x-wings case, and even then didn't happen often.

There were also Pirate X wings. Much as I love the series dearly, I have to accept that TIE Fighter should not be used as justification for anything.

To note - the Wraith's shuttle Narra was originally used by an Imperial officer-turned-smuggler - it's got a Falcon-style contraband hold under the floor.
