Hi,
I've started playing not long ago and my favorite ship is the MC80 so I bought 2 of them. I didn't try it yet, but I was wondering if it was too much for a 300 or 400 points game to field 2 MC80 at once? Ackbar would sure do well with them, but do you have any tips on how I could successfully field 2 MC80?

Its certaintly doable.
I've run two MC-80 lists in the last couple of tournaments and done poorly. You defineatly want to maximize your firepower and get first player. The real problem is that the other player will activate two small ships, see where both your MC-80s go, and be able to choose an angle of attack that avoids your broadsides (or worse yet, park a ship directly in front of you so you can't move). Two MC-80's are great for a fun game, but you'll probably regret it in tournaments where you have to play it for 3 games in a row.
My second MC80 arrived yesterday, and am planning to run a pair of them tonight. Looking at having two Command variants and a bundle of bombers with Dodonna on hand.
It feels like any list that's putting all its eggs in one basket this way will either walk all over people or crumble, depending on opponent/list/objectives.
I just played against the craziest fleet I've seen - 2 MC80s and 1 CR90. The TRC90 had Raymus and Tantive and was support to the MC80s by throwing tokens to them. All 3 had projection experts and threw shields on whatever was getting focused down. Both MC80s had Redundant Shields. Basically, whatever got hit the previous turn got around 6 shields the next turn, right on the arcs where they wanted them. Ackbar gave it the extra offensive boost. That was tricky to play against and fun to see how it worked.
I was at a local store championship yesterday and a Rieekan 2 x MC-80 list took first. Not sure of the exact setup but in one game, Zombie Wedge and Zombie Luke enabled the player to lock down and kill 8 Y-wings and 2 YT-2400's with 3 other named squadrons chewing up Y-wings along with AA fire from the MC's.
