So from what I've heard the rule of two and Darth Bane are cannon but Darth Bane and his trilogy aren't cannon.

Rule of thumb: Everything is canon until contradicted. Darth Bane had an appearance in TCW, therefor he is indisputable canon. His trilogy has not been contradicted by any new canon work, so for now you can assume that it is true, but it might be inaccurate - who knows?

Have you read his trilagy? I haven't yet but some of my friends have said its good
I haven't, either, but friends of me who are huge into the old republic setting praise it as a highlight. It probably is worth it.
Yoda mentions the rule of two in The Phantom Menace, the novelization of this movie identifies Darth Bane as the author of this rule, that's why it is still canon.
I wholeheartedly recommend Bane's Trilogy, canon or not it remains a really good read, one of the best things that was created in the old EU and one of very few that hasn't been destroyed later.

That's up to you, they aren't connected in any way. I'm not a huge fan of Thrawn's Trilogy (I like Thrawn as a character, tho, at least in his original apperance), IMO it hasn't aged well, but I'm most likely in a minority

That's up to you, they aren't connected in any way. I'm not a huge fan of Thrawn's Trilogy (I like Thrawn as a character, tho, at least in his original apperance), IMO it hasn't aged well, but I'm most likely in a minority

Well, the Bane trilogy deals with ancient Sith. If you are into dark force stuff that one probably has a lot for you. A plus (a very minor one for me, though, since I don't much care about canonicity) is that it is not overwritten by new Disney media.
I am a fan of the Thrawn trilogy and I would recommend getting it at some point. It helps if you prefer the empire, because the strongest characters definitly are Thrawn and his captain Pallaeon.
I can also recommend some new canon books: "Tarkin" is really great and fleshes out the character well (in fact that is something the author, James Lucieno, in general does well. "Darth Plagueis" is in the same place the Bane trilogy is right now and might be my favourite Star Wars book ever, since it genuinly made me enjoy TPM). "A New Dawn" is a bit too inconsequential for my taste, but it does have great chemistry between Kanan and Hera - probably only worth it if you like Rebels. "Before the Awakening" truly is a little gem. It is three short stories, each with one of TFAs characters as protagonist. Finns story is a great look into the inner workings of the First Order with some interesting insights. Reys story is a tale from her life on Jakku that illustrates her every day life before BB-8 enters it and has some good characters. Poes story is what you buy the book for. It explains the relationship between the Resistance and the Republic and Poes motivations to join the former.
