That is a great format and I would love to have enough of a community to support things like that. The problem really is that it is not friendly to beginners who might not have enough of a collection.

True, but if a format is more beginner friendly (like the simple 100/6 is) it has a greater draw which is really important in areas with few players.
Our area has a good amount of players.
The meta being dominated by 2 and 3 ship lists also makes it easy for new players to field 2 lists. People that main Scum and are new may have some problems making an effective list, but they were warned multiple times that dual Aggressors and Aggressor/Boba were the only viable Scum lists until wave 8 came out. People that play Rebels or Imperials can just throw down Poe and Miranda or Soontir and a Deci and there they go.
It's one of the few redeeming qualities of the 2 ship meta, that you can just buy 2 ships and scrounge a VI, PtL, and an Engine Upgrade off of someone and you have a power list.
If you're so new that you don't have 2 lists worth of ships, the list you would create in a single list format would likely be awful anyways.
Oh, you want variety. So if the two squadrons are FatHan/Corran and RAC/Fel that is giving you the variety you seek?
