Here's what I would make out of your purchases. Strong attacks, strong defense, no stress concerns.
Carnor Jax

-Stealth Device
Kath Scarlett
-Push The Limit
-Fleet Officer
Epsilon Leader
-Weapons Guidance
-Twin Ion Engine
This squad is best together but don't be afraid to separate and regroup if it gets nasty. Fleet Officer could be switched out for Advanced Homing Missile but I like the long term benefits of keeping it in. Remember that Fleet Officer can also give a focus to the ship its on. Push The Limit allows for strong Target Lock/Focused attacks or keep the focus for defense. Make use of the Firespray's rear arc if necessary, it can help arc dodge while still having a shot yourself. Carnor can focus and evade to get in close and stay alive and a second focus from the fleet officer.
Here's a list that I think should work alright, assuming he has some experience flying his shuttle and interceptor:

Omicron Group Pilot with Vader
I prefer hull/shield on Carnor to a stealth device as he prefers to get up close, and rebel captive on Kath makes her a difficult target for enemy aces. I think that PtL on Kath without an engine nakes her too stiff and predictable.
If he doesn't fly the shuttle much then you could swap it out for Omega Leader (with juke and comm relay) or even a couple of basic TIE Fighters and the list should still be solid.
