So, Dengar states:
"Once per round after defending, if the attacker is inside your firing arc, you may perform an attack against that ship."
Twin Laser Turret states:
"Perform this attack twice (even against a ship outside your firing arc). Each time this attack hits, the defender suffers 1 damage. Then cancel all dice results."
Cluster Missiles states:
"Spend your target lock and discard this card to perform this attack twice."
Now it seems to me, doing what Dengar's card says, that I could interrupt before the second TLT or Cluster Missile attack because I have already defended (which is Dengar's trigger).
I believe that this wouldn't stop the opponent's second attack if they were destroyed by Dengar's return attack (due to the simultaneous attack rule), but such an interrupt could be important if it allows Dengar to use his ability prior to being destroyed by a lower pilot skill opponent.

The opponent would indeed get both attacks, and Dengar can interrupt between them. It has nothing to do with the Simultaneous Attack rule. Once a card/ability is triggered, it is fully resolved. And this would apply to Twin Laser Turrets or Cluster Missiles, even if Dengar manages to destroy the attacker before resolving the second attack.

Yes, I agree on the non-applicability of the simultaneous attack rule. Simultaneous attack only applies to equal pilot skill, not a card effect already triggered.

If the condition of the effect is met and is mandatory, then the effect resolves. The timing on this one is pretty straight forward. The double attack cards say "perform this attack twice". The Dengar Pilot card says "after defending". Unless otherwise changed via upgrade, attacks are defended against. Ergo, you'd be able to interrupt the double shot with a shot of your own. It is worth noting that Dengar is once per round though, so I'd probably only interrupt if A) the Ship had 1 HP (maybe 2, but that's a big if), and B) if Dengar only has 1 or 2 HP and stands a fair chance of being killed before he can counter.

Reason being, only bad things can happen if you let them attack before you. You could get a crit that prevents you from attacking at all, or reduces your attack dice when you do. Alternatively, you could inflict either of those on the attacker to your benefit.
The one time I'd consider not interrupting is if there's a high agility attacker who has a focus token that he's debating whether or not to use on defense or offense. Even then, I might still attack and force him to spend it on defense instead of his next attack roll.

now that you mention crits, what would happen if either dengar or the tlt carrier gets a blinded pilot?
for instance, hawk with greedo and tlt, first attack hits and gets blinded pilot, does Dengar's counter attack count as next time attacking?
and conversely, what happens if the hawk drew a blinded pilot from the counter attack?
Dengar's counter-attack ability would count as his next opportunity to attack, and that would be his "once per round" as well, so no further counter attacks from him during the round.
If the HWK drew the Blinded Pilot card from the counter-attack, it would still get the second attack from TLT, but it's next opportunity would be the one affected by Blinded Pilot.

The TLT attack has been triggered, so it finishes resolving, even if the HWK is destroyed by Dengar's counter-attack.
Amusingly, as soon as Dengar draws that Blinded Pilot crit from the new deck, he can flip it down unless he's already done his counterattack that round. This could even work to restore his regular attack, in the event that he is dealt that crit from a higher PS pilot.

I was thinking along the lines of "...(even if there was no target for an attack)..." as written on the Blinded Pilot critical hit, that his opportunity for counterattack would happen first, then check to see if the attacker was in arc to see if the attack can be performed (which the critical hit doesn't care about at that point). But it most likely works the other way, since it's written with arc-checking first.
