Is there a rule for wha happens if you don't set a dial for a ship?

Well, surprise! People can overlook things especially if it has never occurred to you.

I can't say for certain with regard to any one who responded to this thread, but forum users here are much more likely to not look into something and provide an answer based on their gut rather than miss a clear rule/FAQ entry.

FAQ page 5, under the heading "Missed Opportunities". Your opponent does indeed select the maneuver you perform, and is not limited to selecting non-red maneuvers.

Pretty much goes if a ship does an illegal maneuver (such as not making a maneuver or choosing a red maneuver when stressed) then your opponent chose a legal maneuver for you.

For me I would rather just make a default white 2 straight which is more thematic as all ships have a green 2 straight so they do get penalized as not triggering any green maneuver effects such as R2-D2 or remove stress. Also it is thematic as a pilot not paying attention would just drift through space. However in competitive play and to deter lewd play and discouraging cheating by PUNISHING the simple mistake I can see why FFG made the rule that they did instead.

For the most part FFG attracts many good players but reciently they had to result to a blacklist and suspensions. THOSE type of players have begin to make their way here from Warhammer 40,000.

Could add "set a maneuver that is not available to the ship type" to that list as well. This is using the wrong dial for a ship; if the dial shows something the ship can do it really doesn't matter what the dial looks like but if it is something the ship can not do then the opponent gets to pick something the ship can do.

On page 6 of the FAQ it says clearly: 'the player who forgets to set his dial, has to buy the other player a beer'
