Is there any way to shoot through the shields?
If a card says to give someone a damage card, but they still have shields, are the shields bypassed for the damage cards?

If the card says deal a damage card then shields are ignored.

Advanced Homing Missiles and Proton Bombs will do it. So does the TIE pilot "Wampa".

Cards don't care about shield tokens. DAMAGE cares about tokens and removes them before it deals cards but once a card is dealt it stays unless something else actually removes it.
If you have Po with R2D2 you could see him flying around with 3 shields and two damage cards on him any number of ways. Maybe he was struck with effects that just dealt him cards or maybe his shields were knocked out by damage and he then picked up a couple cards before R2D2 managed to restore all of his shield tokens. The damage cards are still sitting there waiting for something else to come along and finally finish the ship off.
Some have thought that regaining shields would cause damage cards to be discarded instead; THIS IS WRONG.
I played a game a couple weeks ago against Redline and in one turn he dropped a proton bomb on my fully healthy B wing and then hit me with an Adv Homing Missile. Drew a direct hit and boom, 3 hull down and didn't touch my shields. I was gone. And I was pissed.

apart from Wampa, they're very expensive and very RNG-dependent for what they do
(i.e, unreliable)
Wampa's ability isn't reliable (at least, not without palpie), but he's a reliable little Tie. The ordnance could end up being devastating, or little more than a light fart in space

R5-D8 removes damage cards. Several other cards prevent damage cards from being dealt, but do not remove them once they are (Chewy, Salvage Astro, Jerjerrod, IA)

No.
As the others are already pointing out you have R5-D8 who could remove a card but it isn't so easy. It can only remove a face-down card, requires an Action to use, and even then requires a die roll to see if the card is actually removed. I may use R5-D8 on Porkins but that is only because Porkins has an ability that may deal himself a face-down card when used; this may even be pushing it.

If Chewy decides to upgrade the falcon to accomodate an astromech in EpVIII then R5-D8 will replace R2-D2 as the most hated droid in X-Wing!
I tried a Gamma Bomber with Advanced Homing Missile load out over the weekend. I found it very difficult to find a time to actually fire it. Locked on, too close. Range 2, check, console fire, doh!
Since Imp Vets are a ways out, I'm going to try them on a certain Major. Maybe then I could land one. Proton bombs rock, btws.

Nope. That's entirely a Rebel trick at the moment.
That is an ability that is being kept very rare. R5-D8 can do it for ships with an astromech slot, and one of the Jumpmaster pilots can shed damage when he dies. That's about it.
