Nowhere. The license doesn't allow them to distribute PDFs (except for a few small items as "promotional materials")
You can't. At least not by legal means. FFG is forbidden from selling pdf by the licence they have, so no pdf available. The licence is very old and equates pdf to electronic media like games, and the game licence is held by EA.
In a nutshell FFG doesn't own the rights to make them. This has pretty much been true of all versions of Star Wars as EA has held the pdf rights for a long time. I know a lot of people think it's odd that pdf's were designated as games but these contracts were made a long time ago before pdf books were actually a thing that people did. Technology moves faster than contract law.

I know what you mean. And I've been in the boat that where there is a pdf legally available for an RPG book, I'll more often than not buy the physical book AND the pdf.
But, with the way that divisions of the IP are split up between LFL and Lucas Arts, we're not likely to ever see a licensing deal where we get the benefit of doing so.
Obviously nothing's likely to happen until at least all the career books are out.
My group has had a tremendously rough time getting books. Seems like none of the local shops can get them and it's spotty even on online retailers - for instance AoR is out of stock on both Amazon and Barnes & Noble last I checked. PDFs would really make our lives easier, but it is what it is.
You could always scan your books yourself and OCR them with Acrobat. It doesn't take as long as you'd think. I did it with my DC Universe RPG books. As long as you own the books and don't share them, its not illegal.

Technically, sharing it at all is a violation of Copyright law. You're not likely to be prosecuted, but that isn't the same as it being "okay".
I'd argue that making a PDF copy of a book you own, for only the purpose of making it readable on your own electronic device, especially when NO electronic copy is available from the publisher... falls squarely in the realm of Fair Use. Furthermore, passing it around the table at a gaming session is simply an extension of an accepted use of the book in its original print format.

The community is working on that. IMO, the FFG Star Wars RPG Index is part of that answer.

I'm hoping that sometime after the majority of the career books are out that we get a couple of compilation books, reprints in the form of "The Ship Book", "The Weapons Book" and so on. Like what WEG did on occasion.

That's how I'd prefer RPG books to be organized to begin with -- ships together, weapons together, etc -- not spread out with a ship or two here, another ship in this book, etc.
