Is having every single card in your list a requirement for tournaments? Say I build a fleet online and want to put in 5 heavy turbolasers in, do I need physical copies of each card? Seems strange if they do require the physical cards, as long as the points work out. But that's just me. Thought I would ask.

Yes. (If you want 5 Turbolasers you have to have 5 Turbolaser cards.)

In a casual game you may get away with having just one. However, in any sanctioned tournament (store championship and such) you have to have the card
I supply all the goodies for 3 people and maybe adding a fourth tomorrow with luck. So now and again we just get ship cards and 1 of each upgrade, mainly to speed up the start of a game when someone hasn't emailed me their list for the day or wants to change it up in a second game.
Tournaments that are not sponsored by FFG may have their own rules, make sure you check with the tournament organizer.
A lot of tournaments I know (and the ones I organize) allow photo copies of the cards (preferably the same size and full color). Having to buy a 50 euro box for a single card is somewhat expensive.
You do need a card (original or copy) at every ship that contains the upgrade so it is always clear for you and the opponent. As said by thecactusman17, do check in advance with the organizer.
If you are running a FFG Tournament with an FFG prize kit, then you are required to adhere to the tournament rules. Those tournament rules state that only original unmodified components can be used. There are specific exceptions to this (ships can be modified by being painted, for example)... But having photocopies of cards is not one of them. FFG states this is so there is a consistent experience in their Organised Play events, which run the gamut from a casual league all the way to the World's Championships...
Its a small thing. Its a technical thing. I don't personally agree its the best thing... But they are the rules , and failing to adhere to it can mean sanctions from your distributor or even FFG itself in getting future prize support or exclusive events... I have not heard of this actually happening thusfar, but I have heard of direct threats of it happening from an Exclusive International Distributor...
If you are not using an FFG prize kit, and have organised your own prizes, then absolutely , go nuts and allow people do do what they wish, including yourself with your ground rules... Just be polite and let people know that's whats happening.

Spot on! I have multiple photo copies in both Armada and X wing. Should FFG feel cheated? No! I have a limited budget and I've used the money saved to buy more expansion packs.
