Is my Fat Han list too outdated

First off I do know the shortcomings of this list pretty well, and also how to minimize risks. I have not lost a match using this list for about 2 months (deff not saying this list can not be beat) actually a couple of people were complaining that I had a "lazy list" and that it auto flew itself and took no real skill. I shut that idea down by giving anyone that thought that my list and ran this instead.

Against someone that doesn't know to keep Poe from stress hog I made quick work of my own list taking down Poe round 2 of combat before Poe could get a second shot off. which then got me thinking if my list was made obsolete by the stress hog. I have since ran a couple of variations of my list with Poe and stress hog (switching PtL for VI, Predator, trading R2-D2 for R5-P9) even trading red squad for Eaden Vrill (which was fun as hell)

what list do yall think is most competitive, and am I right in the assessment that my original list is just not that good anymore?

I think your second squad is better. The two things at the top of the meta right now are TLT's (twin laser turret- K-wing expansion), and TIE swarm (resurgence following the Gonzati and TIE/FO expansions). Every player should be building squads that take these into consideration.

Actually few people fly TIE Swarms. You can probably just ignore them unless a lot of people actually play them in your area.

I prefer to rely on Han reroll or Target Lock and keep PtL (especially cause I love Kyle Katarn also I don't mind losing PS bid on Han or Poe (I can play well either way with the fact that I am either moving before or after another ship with same Pilot Skill) so I never really bother with VI. But those are all just personal choices I have made with the list, thay are all very good variations.

I just don't know if the yt-1300 as a ship is gonna be top tier anymore is what I am afraid of with all the new ships with crazy pilot abilities coming out

Idk I have always been a fan of PtL and it works excellent in tandem with Kyle Katarn on Han's ship. I'll be honest I want to find a better replacement on Poe. But no one has really taken advantage of blocking him when restricted to greens.(or if I think they are gonna try and block me I just do a random white with a stress still to stay safe). and if you can get away with being able to use PtL Poe becomes so much deadlier.

A pretty good option for Poe is either VI or Predator. VI weakens your attack siginificantly, but it allows you to keep your arc on aces, which are common these days. Predator makes you a generic-slayer and is still good versus higher PS opponents. Both leave you the option of using that glorious Talon Roll!

While generaly true there are now matchups where this is dangerously wrong - ships that stack a lot of stress are part of the meta. There is a reason that Paul used R2-D2 in his Worlds list. Now you might live in a meta where people don't use ships like that, but you have to be sure of that.

Wouldnt Jan be better with Kyle then C-3po? You could take an evade token everytime you remove a stress as well as evading with the title for a second. If you use push the limit on a regular basis I think it would work better.
