D&D has released the Dungeon Masters Guild where the community can publish custom adventures and content in an official licensed manner (and even make a little money along the way).
Do we ever see Disney / Lucasfilm / FFG doing something similar?

FFG isn't permitted to sell digital copies of their Star Wars RPG books, or really any of their other Star Wars games, since it's tied up in EA's rights (barring the Star Wars Dice app, which they either were able to do through a loophole or they were able to come to an agreement with EA over it).
So I'd imagine that no, they won't be able to do something like that even if they wanted. At least not until the next time their contract gets renewed after EA's contract ends in an attempt to see if they can talk Disney into removing those from the overly broad video game contract license - and won't be for about 7 more years.
D&D is a different entity as the the company that owns the property (and Forgotten Realms) is the one who set up the Dungeon Masters Guild. They also have a very different business model and more of a history of fan and third-party product development. Since FFG licenses Star Wars , that presents a whole host of restrictions with regard to who can work on the title.
If you're a good writer and want to write SW material, network with FFG, get to know some of the other writers, and pitch when there's an opening.
I think the closest we'll get to that for Star Wars is people sharing their creations free of charge online. Something driven by the fanbase.
I think the Dungeon Masters Guild is a great step for D&D, but the licensing issues around Star Wars present a lot of problems, even if this was something FFG wanted to do.
