Thought this would be a fun thing to discuss. As soon as Disney mentioned that they'd be doing non-main-Trilogy Star Wars films, I imagine pretty much every fan started thinking about exactly what their perfect Anthology films would be. So, what's yours? You have the budget, you're the director/writer/bloke in charge, how would you make a Star Wars Anthology movie?
To start things off, a couple of my own ideas, based on the fact that what made Marvel movies so successful was (among other things) the fact that they were actual genre-based films, rather than just Superhero ones. Applying the same theory to Star Wars, this is what I came up with:
A Western set on Tatooine. No off-planet action, no space stuff, just the hive of scum and villainy that is Mos Eisely going about its life. The Hutts put a bounty out on someone who hightails it out into tte wastes to get away. Cue a team of grizzled bounty hunters, ex-soldiers and other ne'er-do-wells racing to collect the bounty. Classic Western formula, with Speeders for horses and blasters for six-guns. Bonus points if it is set between III and IV and features the awesome Cad Bane from Clone Wars...
Rogue One promises the gritty reality of a war film, on the ground and in fighters, but what about something set entirely around capital ships and their crew? Think a traditional submarine film, but instead of a Russian nuclear sub you have an Imperial Star Destroyer with experimental weaponry or highly important prisoners or information. An accident causes them to lose power, and until it's repaired, the ship is just drifting in space. Tensions rise, old rivalries come to a head, and all the time, the Rebels are closing in...
I would say The Old Republic, but that deserves at least a trilogy of its own...
