i would like introduce the War Droids from Force Unleashed 2 in the next session.

Any advices to stat out this droids?

There is a security droid with a shield in Far Horizons (pg 49), use him as temple, make him bigger I guess.

I would modify the CryoBan Projector from Fly Casual. (Carbonite Spray Cannon): Skill Ranged (Heavy), Damage 6, Critical 2, Range Short, Encumbrance 3, Hard Points 0, with Blast 6, Cumbersome 3, swap the Vicious 2 for Ensnare 3 and make it require an easy Coordination check to keep from suffocating during those 3 rounds.

Ressiliance seems better then coordination.
